Tasting Notes
100% Semillon. Wild fermented and matured in old French oak barrels. Made from a small block of Semillon high up on the Hill (1 000 vines) — a range dedicated to our winemaker's trusty Jack Russell pup, Saartjie.
Initial aromas of citrus shavings, peach, vanilla, honey and cut grass on the nose. Luscious body with subtle elegance on the palate, with hints of crushed biscuits and honey, and an oaky finish. Drink now or mature for a few years.

Fermentation
The grapes were wild fermented in French oak barrels. The wine was kept on the lees and stirred up regularly, then further matured in French barrels for 9 months.
